Khoai mua về gọt vỏ và rửa sạch. Khi gọt xong, nhớ cho khoai ngâm qua thau nước có cho 1 muỗng muối để khoai không bị thâm.
Cắt lát vừa đừng quá mỏng, rồi cắt lại sợi dài. Vớt khoai ra khỏi nước cho vào rổ ráo nước.
Cho 1 muỗng canh muối vào rổ khoai. Xóc khoai đều với muối.
Cho dầu vào chảo, đun dầu cho nóng. Khi dầu nóng đều, thì cho khoai vào chiên sơ. Bước này chỉ chiên sơ khoai vừa chín tới. Vớt khoai ra đĩa có lót giấy thấm dầu. Rồi bỏ khoai vô ngăn đá cho se bề mặt.
Khi gần ăn. Cho khoai vào chảo dầu sôi chiên lại lần 2. Chiên với lửa lớn. Khoai vàng xém cạnh. Vớt khoai ra đĩa hoặc tô.
Rắc phô mai lên trên, cho vào túi nilon hoặc tô xóc phô mai phủ đều các cọng khoai, rồi dùng nóng. Cách chiên 2 lần với muối, giúp khoai giòn lâu, không bị úng dầu đâu nhé.
