Vớt khế đã ngâm ra, để khế ráo nước rồi xếp khế vào nồi. Cứ một lớp khế, rải một lớp đường tới khi hết. Để khế ngấm đường trong khoảng 3-4 tiếng đồng hồ.
Đặt nồi khế lên bếp, đun sôi rồi hạ thật nhỏ lửa. đun và thỉnh thoảng đảo đều cho khế ngấm đường.
Khi khế chuyển sang màu vàng cam thì cho 100g gừng băm vào, đảo đều tay cho đến khi mứt chuyển sang màu nâu cánh gián là được.
