Cứ mỗi dịp xuân về là nhà nhà đều chuẩn bị dừa non để làm mứt bày biện cho khay bánh mứt ngày Tết thêm đặc sắc, và đương nhiên mứt dừa từ lâu đã trở thành một món mứt không thể thiếu. Chỉ cần một chút khéo tay, một chút sáng tạo và bạn sẽ có ngay những sợi mứt dừa thơm ngon, đẹp mắt thiết đãi khách đến nhà.
Đầu tiên dùng dao răng cưa cắt cơm dừa non thành từng sợi răng cưa rộng khoảng 0.5cm.
Sau khi cắt xong thì rửa cơm dừa với nước ấm nhiều lần cho đến khi nước không bị đục nữa thì đổ ra phơi cho đến khi ráo nước.
Sau khi dừa đã khô hoàn toàn thì chia dừa và đường thành 3 phần bằng nhau. Ướp 3 phần dừa lần lượt với đường và 3 loại bột: trà xanh, gấc, cà phê. Đem dừa ướp qua đêm cho đường tan và ngấm vào dừa hoặc ít nhất là cho tới khi đường đã tan hết.
Cho lần lượt từng phần dừa vào chảo hoặc nồi đế dày sên. Lúc đầu bật lửa to để nước nhanh cạn.
Khi nước gần cạn hết, bạn vặn lửa nhỏ sên mứt đến khi mứt khô đường kết tinh bám quanh miếng mứt là được. Trút ra rổ rây bớt đường thừa. Để nguội rồi bảo quản trong hũ kín để không khí không thể vào, tránh mứt bị mềm mất ngon. Làm tương tự với những vị còn lại và bạn sẽ có ngay một dĩa mứt dừa thơm ngon với 3 hương vị để thiết đãi khách.
